Salad delight

I made a delish salad the other night for my cousin and sister (who were visiting from the great land of Oz).    Given their response, and my cousin’s insistence that I open up a little healthy café of my own, I thought the recipe might be worth sharing.  So here it is…

INGREDIENTS
• 1 Zucchini
• 1 Large (raw) beetroot
• 2 Large carrots
• 1 avocado
• 3 spring onions
• 3 red chilli’s
• 2 garlic cloves
• 2-3 tbsp. olive oil
• Splash of soy sauce
• 2 sweet potatoes
• Sprinkle of cinnamon
• Cracked black pepper
• 2 tbsp. sunflower seeds
I always like to use as many vegetables as possible to fill up my salads – ensuring that they are tasty, colourful and super nutritious.  I cut the raw veges into tiny cubes and then mix them all together.    Drizzle the olive oil and soy sauce over the salad and mix in.  Then sprinkle with cinnamon, cracked pepper and chilli.  Mix and allow the flavours to soak in.
Bake the sweet potato and when it has cooled down cut it into squares and mix in with the rest of the veges.  Sprinkle with sunflower seeds then dig in!
